Taylor's Culinary Institute's Exclusive Michelin Star Dinner Experience with Le Berceau Des Sens


Le Berceau Des Sens Restaurant, a teaching restaurant with high distinction located at EHL Hospitality Business School, Switzerland. It is the first practical restaurant in a school to be awarded one Michelin star.


Chef Cedric Bourassin is known for his persistent and meticulous work as a result of his eight years working in Japan before he joined EHL. Mr. Thomas Fefin, a "Meilleur Ouvrier de France" (MOF) and Head Sommelier at EHL. Taylor's Culinary Institute (TCI) was honored to invite both of them to Taylor's Lakeside Campus to guide the students for a Michelin Star Dinner event.

Chef Cedric and TCI's Chef have crafted an exclusive 5-course menu with the wine pairing advice from Mr. Thomas for the dinner event. The evening began with a welcome drink session in our newly built glasshouse restaurant named 'Terrasse,' where guests enjoyed sipping mocktails while enjoying the beautiful lake view from the glasshouse.

The dinner was served in Truffles Restaurant with a total of 40 guests. It began with an exciting Amuse Bouche served in foam paired with Barton & Guestier Vouvray, which has a good acidity and crispness to the tongue. The main course was Black Angus Beef with Kimchi paired with Chateauneuf-du-Pape. The full-bodied red wine, with its rich and robust flavor profile perfectly complements the bold and spicy flavors of the beef and kimchi.


The dinner event was concluded with a tropical dessert paired with an intriguing white port wine. The sweet notes of the port balanced the acidity and sweetness of the dessert, creating a perfect end to a memorable wine-pairing dinner night.

The service was impeccable and the wine glasses were quickly refilled. Students were honoured to learn from the best, a Michelin-starred Restaurant Chef and a MOF. The event was open to the public and the restaurant was fully booked with positive feedback.


Before the night ended, Chef Cedric and Mr. Thomas took the opportunity to introduce themselves and the students who made the dinner event possible to all the guests. The audience applauded for the fantastic night!
